Crab Quesadilla

These Crab Quesadillas are a quick and flavorful fusion of creamy seafood and Tex-Mex comfort, featuring shredded Louis Kemp Crab Delights® Leg Style mixed with Monterey Jack and cheddar cheeses, finely chopped red bell pepper, green onions, garlic powder, and an optional dash of chili powder for a spicy kick. The savory filling is tucked into large flour tortillas and grilled with butter or oil until golden and crispy on the outside, with a gooey, melty center. Serve hot with sour cream, salsa, or guacamole for a deliciously satisfying meal or snack.
Ingredients
1 (8 oz) package Louis Kemp Crab Delights® Leg Style, shredded
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded cheddar cheese
1/4 cup finely chopped red bell pepper
2 Tbsp chopped green onions
1/2 tsp garlic powder
1/2 tsp chili powder (optional)
4 large flour tortillas
Butter or oil, for cooking
Sour cream, salsa, or guacamole, for serving
Directions
In a bowl, combine shredded Louis Kemp Crab Delights® Leg Style, Monterey Jack, cheddar, red bell pepper, green onions, garlic powder, and chili powder (if using).
Place one tortilla on a flat surface and spread half of the crab mixture evenly over it. Top with the second tortilla. Repeat with the remaining crab and tortillas.
Heat a large skillet over medium heat and lightly butter or oil the pan. Add one quesadilla and cook 2–3 minutes per side, or until golden and the cheese is melted. Repeat with the second quesadilla.
Transfer to a cutting board and let cool slightly. Slice into wedges.
Serve warm with sour cream, salsa, or guacamole.
