Chipotle BBQ Power Bowl

Sauceable Wild Alaska Pollock Nuggets tossed in chipotle-lime BBQ sauce over a cilantro and lime rice topped with shredded lettuce, roasted sweet potatoes, pickled red onion, black beans, smashed avocado, and a drizzle of lime crema.
Ingredients
4 ½ lbs. Crispy Battered Sauceable Wild Alaska Pollock Nuggets, fried according to package instructions
3 cups BBQ Sauce
¼ cup Chipotle Sauce
1 Lime
18 cups Cilantro Lime Rice
6 cups Sweet Potatoes, diced and roasted
6 cups Seasoned Black Beans, drained and rinsed, heated
3 cups Shredded Lettuce
1 ½ cups Pickled Red Onion
1 ½ cups Smashed Avocado
¾ cup Lime Crema
12 Lime Wedges
Directions
For the Chipotle Lime BBQ Sauce – yields 3 cups
Combine BBQ sauce, chipotle sauce, zest, and juice of 1 lime together in a mixing bowl and whisk until combined and uniform.
To Make 1 Serving
Build bowl by adding 1 ½ cups cilantro lime rice for the base and topping with ½ cup each of roasted sweet potatoes and seasoned black beans.
Toss 6 oz. of freshly cooked Sauceable Nuggets with a ¼ cup of Chipotle Lime BBQ Sauce and top the rice bowl.
Add the sauced Nuggets, and continue building the bowl with ¼ cup shredded lettuce, 3-finger pinch of pickled red onions, 2 Tbsp. of smashed avocado, and 1 Tbsp. drizzle of lime crema and a lime wedge garnish.
