Ingredients
18 oz Crispy Battered Sauceable Wild Alaska Pollock Nuggets
½ cup roasted red pepper sauce or mild harissa
2 Tbsp olive oil
2 cups cooked brown rice
2 cups arugula
1 cup cherry tomatoes, sliced
1 cup sliced cucumber
½ cup thinly sliced red onion
½ cup crumbled feta
½ cup Greek yogurt
1 Tbsp lemon juice
Chopped parsley, for garnish
Directions
Cook Crispy Battered Sauceable Wild Alaska Pollock Nuggets according to package directions until hot and crispy.
Warm roasted red pepper sauce with olive oil, then toss hot nuggets until evenly coated and glossy.
Combine greek yogurt and lemon juice.
Divide brown rice between bowls then arrange arugula, tomatoes, cucumber, red onion, and feta in sections around the bowl.
Top with saucy fish nuggets, drizzle with lemon yogurt over everything, and finish with parsley.
