Wild Alaska Pollock en Papillote with Fingerling Potatoes and Citrus

1/4 Cup Blackberry Jam
4 teaspoons Dijon Mustard
1 teaspoon Oregano (Dried)
1/8 teaspoon Cayenne Pepper
Fresh Cilantro, chopped
4 Fillets Trident Seafoods® Wild Caught Alaska Pollock Fish Fillets
(For best results prepare using frozen fillets)
In a small bowl, combine jam, mustard, oregano and cayenne. Set aside.
Preheat grill to medium-high.
Spray the fillet on both sides with cooking spray.
Grill Fillets for 5 minutes. Turn over fillets and brush with jam mixture; cook for 2 minutes. Turn fillets and brush again, cook another minute.
Sprinkle fillets with cilantro and serve.
