These refreshing Crab-Stuffed Cucumbers make a light and flavorful appetizer, featuring crisp English cucumber rounds filled with a zesty mixture of chopped Louis Kemp Crab Delights® Chunk Style, lemon juice, light mayonnaise, red onion, and fresh cilantro. Ingredients
1 (8 oz) package Louis Kemp Crab Delights® Chunk Style, chopped
1 English cucumber
1 Tbsp lemon juice
1 Tbsp light mayonnaise
2 Tbsp fresh cilantro, minced
1/4 cup red onion, finely diced
Old Bay seasoning, to taste
Directions
Slice cucumber into 1-inch rounds. Use a small spoon or melon baller to gently scoop out the center of each slice, leaving a base to form a cup.
In a mixing bowl, combine chopped Louis Kemp Crab Delights® Chunk Style, lemon juice, mayonnaise, cilantro, and red onion. Mix until well combined.
Spoon the crab mixture into each cucumber cup.
Sprinkle with Old Bay seasoning to taste. Serve chilled.
