- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon chopped ginger
- 8 cups chicken broth
- 1 tablespoon chili garlic sauce
- 1/4 cup soy sauce
- 1 pound fresh udon or ramen noodles, cooked and drained
- 4 ounces baby bok choy, cut in quarters lengthwise, blanched and cooled
- 2 ounces frozen corn kernels, thawed
- 2 each boiled eggs, cut in half lengthwise
- garnish Thinly sliced scallions
