Wild Alaska Pollock Molé Torta

Wild Alaska Pollock Molé Torta


  • 2 Pieces
  • 2 Large Red Onions (Thinly Sliced)
  • Lime Juice
  • 1 Cup Mayonnaise
  • 2-3 Each Jalapeno Peppers (Chopped)
  • 1/4 Cup Cilantro, chopped
  • 1 Quart Mole Sauce
  • 12 Each Bolillo Rolls (split and toasted)
  • 6 Cups Iceberg Lettuce (Shredded)
  • 1 1/2 Cups Cotija Cheese (crumbled)


Combine onions and lime juice. Set aside 15 minutes or overnight.

Mix together mayonnaise, jalapeno and cilantro. Set aside.

Heat Skillet Redi Alaskan Pollock with mole sauce.

Spread rolls with jalapeno mayo mixture, top with lettuce, fish, pickled onions and cotija. Cover with top roll.
