Firecracker Salmon Lettuce Wraps with Pineapple Cilantro Salsa

Ingredients

  • 1 Cup Thai Sweet Chili Sauce
  • 1/4 Cup Soy Sauce
  • 1 Tablespoon Garlic, minced
  • 1/4 Cup Ginger, chopped
  • 1 teaspoon Red Chili Flakes
  • 1/4 Cup Lime Juice
  • 5 oz Carrot, shredded
  • 2 oz Green Onion, thinly sliced
  • 5 oz Red Bell Pepper (Julienned)
  • 36 Green Leaf Lettuce (Whole Leaves)

Directions

Whisk together sauce ingredients. Mix carrots, green onions and bell peppers. For each serving toss the 3 salmon pieces in 2 tbsp. sauce. Place each piece of salmon on a lettuce leaf and top with 1 oz. vegetable mix.
