Shredded Surimi Elote Salad with Charred Corn and Cream Purée

3 cups SEA LEGS® Supreme Salad Style Surimi Seafood 412027
3/4 cup Red onion, diced
1/2 cup Cilantro, chopped
1/4 cup Jalapeño, small diced
2 cups Roma tomatoes
1/4 cup Olive oil
1/2 cup Lime juice, fresh
1 tsp Cumin, ground
1 tsp Chipotle pepper, ground
2 cups Guacamole
Combine SEA LEGS® Surimi with all ingredients except for guacamole. Place in an air-tight container and store in the refrigerator for at least 4 hours. Serve surimi vichi over guacamole with chips.
