Huacatay on the Wild Side

Ingredients

  • 12 Redi Grilled™ Alaskan Salmon 4oz 410337
  • 1 Cup Lime Juice
  • 1/2 Cup Vegetable Oil
  • 2/3 Cup huacatay paste
  • 2/3 Cup Mint Leaves
  • 8 Garlic Clove
  • 1 1/2 Cups Heavy Cream
  • Salt & Pepper
  • Cayenne Pepper
  • 3 lb Sweet Potato Fries, cooked
  • Mint for Garnish
  • Feta Cheese, crumbled

Directions

1. Blend sauce ingredients until smooth. Season with salt, pepper and cayenne.
2. Serve salmon with fries, sauce, sprinkled with mint leaves and feta.
