Wild Alaska Pollock Burger Thai Papaya Salad

12  Wild Alaska Pollock Burger 4 oz IQF 421800
4 Cups Green or Firm Ripe Papaya (shredded)
2  Plum Tomatoes (diced)
2 Tablespoon Fish Sauce
2 Tablespoon Lime Juice
1-2  Thai Chilies (Minced)
2 Cloves  Garlic, minced
1 Tablespoon Dried Shrimp, minced (optional)
2 teaspoon Brown Sugar
  Salt & Pepper
3 Cups Mayonnaise
12  Burger Buns (Toasted)
  Bibb Lettuce
  Thai Basil (Slivered)
  Peanuts, chopped


1. Combine papaya, tomatoes, fish sauce, lime juice, chilies, garlic, dried shrimp and brown sugar. Season.
2. Spread mayonnaise on cut sides of buns and top lettuce, Pollock burgers, 1/4 cup salad and sprinkle with basil and peanuts.
