Dutch Harbor Salmon & Avocado Panini

YIELDSERVES 12 servings


4 Ounces Cilantro, chopped
4 Ounces Fresh Parsley, chopped
1 Ounce Mint Leaves, chopped
1/3 Cup Red Wine Vinegar
3/4 Cup Extra Virgin Olive Oil
2 Tablespoons Capers, drained & chopped
1 Clove Garlic, minced
12  Panini Rolls (split + toasted)
1 1/2 Cups Mayonnaise
3  Avocado, peeled, pitted & sliced
6  Tomatoes (sliced)

1. Mix together cilantro, parsley, mint, garlic, vinegar, oil and capers and season.

2. Prepare Redi Grilled Salmon per label instructions.

3. Spread cut sides of Panini rolls with mayo, top with avocado slices, tomatoes, salmon and vinaigrette. Cover with roll top.

4. Serve with extra vinaigrette for dipping.
