Smoked Salmon with Fennel and Endive Salad


1 lb Nova Style Smoked Atlantic Salmon Sides VP (3/2.5 lb) 415304
1 1/3 Cups Crème Fraiche
1 Cup Extra Virgin Olive Oil
2 Tablespoons White Wine Vinegar
  Salt & Ground Black Pepper (to taste)
4 Each Fennel, thinly shaved, fronds reserved
4 Heads Curly Endive (Washed and Torn)
2 Heads Belgian Endive (separated)
  Fennel Pollen


Whisk together crème fraiche, vinegar and olive oil. Season with salt and pepper.

Toss fennel and both endive with dressing.

Toss smoked salmon, fennel fronds and fennel pollen.

Arrange endive mixture on plates. Top with smoked salmon and fennel mix and serve.
