10g Protein Noodles™ with Cucumber, Feta and Tahini Dressing

Ingredients
- 4 oz Scallions, finely shredded
- 3/4 Cup Tahini
- 4 1/2 Tablespoons Mirin Wine
- 1/3 Cup Rice Vinegar
- 1/3 Cup Soy Sauce
- 3 Tablespoons Vegetable Oil
- 2 Tablespoons Dijon Mustard
- 1 1/2 Tablespoons Honey
- Coarse Salt
- 2.5 lb Package Coarse Salt
- 3/4 Cup Crumbled Feta Cheese
- 3 Each English Cucumber, cut into batons
- 3/4 Cup Frozen Peas, thawed
- Urfa Biber Pepper
- Toasted Sesame Seeds
Directions
1. Put scallions in ice water to curl.
2. Combine tahini, mirin, vinegar, soy sauce, oil, mustard and honey. Season with salt, to taste.
To serve: divide 10g Protein Noodles™ between serving dishes and top with 2 tablespoons sauce. Sprinkle with feta, cucumbers, peas, Urfa pepper, scallions and sesame seeds.
