During production a two-line code is printed on the can that allows us to identify the product inside. This code is a series of numbers and letters that will look something like this “2392P 50728” and will be located on either the top or the bottom of the can. Product is generally packed in the summer, and is good for six years as long as the can is not dented, punctured or rusted. To determine the expiration date for the can you will need to reference the top row of the code. The third digit from the left represents the year the can was produced. A code of 2392P was likely packed in 2009 and would expire in 2015. It is important to note that these numbers cycle through every ten years. The product should not be consumed if there is a possibility that the can could be more than 10 years old. Back to top When does canned salmon expire? Canned salmon is good for six years from the pack date (see above) as long as the can is not dented, punctured or rusted. Back to top Why does canned salmon have skin and bones? Canned salmon, being a natural product, is packed with the skin and bones intact. The skin and bones are cooked with the meat in the canning process. This makes them soft and edible as they contain much of the nutritive value of the fish. The size of the fish can vary, allowing some cans to be packed with smaller pieces and varying amounts of skin and bones. We do monitor the cans on the conveyor belts on a continual basis during the canning process to adjust for different sized fish and bone quantities. If you prefer using salmon without any skin or bones, you can remove them or you can shop for our skinless & boneless product instead. Back to top What is this crystal I found in my canned salmon that looks like glass? The crystals you found were quite possibly crystals of Magnesium Ammonium Phosphate. These crystals are easily soluble in a dilute acid (such as Vinegar) and are therefore dissolved completely, with no harm, if ingested. The crystals are composed of the mineral components naturally found in seafood: under suitable conditions their crystalline formation occurs. It is relatively rare that crystals of a detectable size are formed. If you still have the crystal, one quick test you can perform is to boil it in a pan of vinegar or lemon juice on the stove. The crystals will dissolve in a few minutes, while glass, of course, will not. This test also illustrates the fact that these crystals are soluble in weak acids, and therefore will dissolve readily in the stomach. They are assimilated by the body as easily as mineral matter of any food. The Seafood Products Association is an independent laboratory that tests most canned salmon produced by various packers in the Western United States. Trident's salmon is packed from fresh fish selected for color, freshness, and flavor: a small amount of salt is added to each can to bring out the flavor of the salmon. At the beginning of each canning season, our salters are extensively tested and calibrated. Every hour a member of our quality control personnel is required to check the operation of the salters. All liquid in the can is from the natural juices of the product after cooking during the canning process. For persons who customarily use less salt in their foods, slight variations in salt content are readily noticeable. Salt-conscious consumers find that draining off the salmon liquid reduces overall salt content; further reductions can be achieved by rinsing the fish gently in cold water for a short time.
